Quinoa(keen-wah) has been cultivated for over 5,000 years and came from South America. Although classified as a grain it is actually the fruit of the Goosefoot plant. It is a small, round grain and is used in everything from breakfast cereal, soups, stews, salads and breads.
Quinoa seed is high in protein with a low glycemic index, calcium and iron, a relatively good source of vitamin E and several of the B vitamins. It contains an almost perfect balance of all eight essential amino acids including lysine, cystine and methionine needed for tissue growth, making it an extremely useful food source. Quinoa also contains albumin and fiber and is gluten-free.
